Aji [Peruvian Green Sauce] Recipe

I have been on a mission to recreate this since it was served to me in a Peruvian restaurant over a year ago. Countless tries, I think I got it down to just how I remember it. This is a sauce common in Peruvian dining and it is often served with roasted chicken.

What you need

  • 1 cup fresh cilantro
  • Juice from 1/2 a lime
  • 2 stalks of green onions (chopped)
  • 1 tablespoon minced garlic
  • 1 tablespoon ketchup
  • 4 tablespoon parmeasan cheese
  • 2 jalepeno (chopped) *
  • 1 tablespoon olive oil
  • 1 tablespoon white wine vinegar
  • 1/2 cup plain greek yogurt  **
  • Salt and Pepper

** The traditional recipe uses mayonnaise, but since I don't care for mayonnaise I used greek yogurt.

* Adjust for spice tolerance

Step 1: Puree all the ingredients (except the yogurt) in a blender or food processor.

Step 2: Add yogurt and process until you have a creamy and smooth consistency

Step 3: Season with salt and pepper

Step 4: Chill till its ready to serve

[I usually prepare this the night before I want to serve it - it tastes even better after 24 hours in the refrigarator)

This is the sauce for everything. Serve with french fries, roasted potatoes or roated chicken.
