Greek Yogurt with Fresh Fruits and Nuts

There is no links I love post today - it has been a tidious week and I have not done much blog surfing. Links I love will be back next week.

This has been a perfect morning - slept in a little; half way through my to-do list before sun up and I have got the day off from work. On my days off, I typically go for a big breakfast of pancakes and artery clogging meats, but today I decided on Greek yogurt.

I have friends that give me that "how can you eat that stuff look" when I mention Greek yogurt, so today i decided to share one of my favorite ways to enjoy it.  I have tried several brands, but I always come back to the trader joe's plain greek yogurt or the fagee plain greek yogurt (I like the tart greek yogurt, not the sugar infused variety). This has been my go to breakfast in recent weeks.

For those who are skeptical about trying greek yogurt, here is one of the ways I enjoy it - its very simple and so good.

Here is what you need

  • 1 cup of Greek yogurt
  • 1/2 cup berries - I like a mix of blueberries, strawberries
  • 1/4 shaved almonds (or nuts of choice)
  • 1 tablespoon chai seed
  • honey
  • 2 tablespoons of soy milk

I like to add in chai seed because it has loads of nutritional benefits, including 11 grams of fiber in each ounce (2 tablespoons).

How to.

Start with the yogurt as base, layer on the berries, almonds, chai seed and soy milk. Drizzle some honey over it and viola breakfast.
